What's goin' on..June 2010

Hello from Florida!  Johnny and I will be back from Florida by July 1st.  We have done several festivals and have been very successful so far- thanks Florida!  In addition we have done two in store tastings at Pepper Palace in St Augustine on St. George st (by the city gates) and 3 Sisters Chocolate in Jacksonville on San Jose Blvd (great chocolate and great family owned and operated store!).  We have done another run of our three main sauces, jalapeno pineapple, classic gold habanero, and mango habanero.

This coming Monday we will be making some  of our award winning Fiery Trail Preserve.  Since we are by St. Augustine we figured we should do a new sauce that involves the Datil pepper, which is famous around St. Augustine.  The new product we came up with is similar to our original Fiery Trail Preserve.  The new product contains datils, mangos, ginger, and spices!  We have had an amazing response to it so far, we will up date you when it is available!

We have enjoyed our time in Florida and have met a lot of great people.  We spent time with family and attended Annie's (Johnnys sister) high school graduation- Congrats Annie!  We went to the beach with Rudy (our mutt) and enjoyed historic St. Augustine.  We have visited (too many) food establishments and enjoyed many of them.  My favorite place we have eaten during our Florida trip was down in St. Petersburg at a restaurant call Gatsby's.  We sat outside since we had Rudy and they brought us a dog bowl with water, another waitress brought Rudy some crackers.  Very pet friendly place and awesome food... and to be honest I dont often rave about good.  Surprisingly I am pretty picky and am grossed out by a lot of foods!  So, trust me, if you ever get down there try it out!  OoOo.. We also went to a donought store that is opened 24/7 named Fray's.  Delicious.  Lots of butter, cream, and icing...got a little sick that night.. Johnny and I got 8 donoughts and a few cookies.. Oh, and this was after dinner... we didn't eat all of them that night, but we were close!

Stay close to see where we will be at next!

Chicken- Easy.

4 tbls olive oil

1 1/2 tbls MANGO HABANERO HOT SAUCE

4 chicken breasts

2 cloves of garlic (diced)

___

Put all ingredients in a ziplock (bag/container) over night (minimum 3 hours for the flavors to infuse into the meat)

Grill, Bake, Fry!  Which ever you prefer :o)

Ideas for this chicken ...

You could always eat this as a meal alone... you could also....

1. Slice the chicken after its cooked and put it on top of a salad or pasta,

2. Make chicken salad with it- just add mayo! ..

For a lighter chicken salad I always like to add some oil and hot sauce (JALAPENO PINEAPPLE) instead of mayo

Panko-Crusted Fish Tacos

This makes enough for four tacos.. it will take about 1/2 hour to make. Preheat oven to 425

Salsa:

4oz tomatoes (diced)

1/4 of a white onion (chopped)

1 red chili pepper (diced)

1 clove garlic (diced)

2 small nectarines (chopped)

*add salt, pepper, and cilantro to taste

__

PUREE THESE INGREDIENTS

__

The Fishy:

2 8oz talapia fillets

1/2 cup panko (Asian "bread crumbs")

1 egg white

1/8 cup CLASSIC GOLD HABANERO HOT SAUCE

__

Mix egg white and hot sauce in bowl.

Cut fillets in 1/2 inch strips

Dip the strips in the egg/hot sauce mix

Roll strips in Ponko

Place strips on baking sheet

BAKE on 425 for 8-10 mins .. Keep an eye on them, as every oven cooks differently.  Serve on soft flour tortiallas with shredded cabbage on the base.  ENJOY!!!
